Maman Diouf’s fish soup

1 onion, finely chopped

4 cloves garlic, chopped

1 generous drizzle of vegetable oil

4 fully ripe tomatoes, diced

2 tilapia or cod fillets, chopped

2 large potatoes, peeled and diced

Pepper and salt, to taste

Fresh hot pepper, chopped, to taste

1 cube vegetable bouillon

1 pinch each of cilantro and cumin

Enough water to cover

1 bouquet garni (sprigs of cilantro, parsley, bay leaf and thyme)


In a medium sized pot, sauté onion and garlic with the oil, add the tomatoes and cook for a few minutes. Add the fish pieces and the rest of the ingredients. Bring to a boil and simmer over low heat for about thirty minutes.

Serve with baguette croutons.
