Black beer-flavoured braised beef short ribs

4 pieces (300 g – about 2/3 lb – each) beef short ribs
60 ml (2 tbsp) canola oil
1 chopped onion
1 chopped carrot
1 stalk celery, chopped
1 small sprig of thyme
10 black peppercorns
500 ml (2 cups) black beer
1 litre (4 cups) beef stock
A pinch of salt

1- Preheat oven to 375°F.

2- Brown the pieces of beef thoroughly over high heat in a heavy bottom ovenproof pan. Add the chopped vegetables, thyme and peppercorns and then, moisten with the beer and the stock, cover and cook in the oven until the beef is tender, about 1.5 to 2 hours.

3- Once the beef is cooked, sieve the contents of the pan to collect the cooking juice. Simmer the juice again to reduce it to a creamy, smooth sauce. Correct the seasoning, and then serve with mashed potatoes and the season’s root vegetables: carrots, parsnips and turnips.
