375 ml maple syrup
125 ml whipping cream (35%)
1/3 cup butter
1 tbsp. flour
Shortcrust pastry for two 8-in. pie plates
Preheat oven to 375°F.
In a saucepan, bring the maple syrup and whipping cream to a boil over medium heat. Remove from heat. Melt the butter in the mixture, add the flour and mix well.
Line two pie plates with shortcrust pastry. Bake crusts for 15 minutes, until golden brown and remove from oven.
Reduce the oven temperature to 350°F.
Stir the eggs into the just-warm maple mixture. Divide equally into both pie plates.
Continue baking for 20 minutes until tiny bubbles appear in the mixture at the edge of the pie plate.
