330 ml (1 1/3 cups) all-purpose flour
250 ml (1 cup) quick-cook oat meal
160 ml (2/3 cup) sugar
1 tbsp. baking powder
1 1/2 tsp. cinnamon
125 ml (1/2 cup) milk
1 egg, beaten
80 ml (1/3 cup) melted butter
60 ml (1/4 cup) maple syrup
500 ml (2 cups) Cortland apples, peeled, and cut into ½-cm cubes
Preheat oven to 400°F.
In a large bowl, combine the flour, oats, sugar, baking powder and cinnamon. Set aside.
In another bowl, combine the milk, egg, butter and maple syrup.
Add liquid to the dry ingredients. Mix everything together to obtain a smooth batter.
Add apples to the preparation and then, pour into a non-stick or paper-lined muffin pan.
Bake for 25 to 30 minutes or until a toothpick inserted into a muffin comes out clean.
