Cream of tomato, plum and pear

1/2 onion, finely chopped
1 small leek, finely chopped
15 ml (1 tbsp) butter
500 ml (2 cups) tomatoes, cubed
250 ml (1 cup) pears
250 ml (1 cup) plums
1 small potato
100 ml (about 3/8 cup) tomato juice
A pinch of chicken base
150 ml (about 5/8 cup) 15% cooking cream
Salt and pepper, to taste

 

1- Sweat the onions and leek in butter over medium-high heat. Add the tomatoes, pears, plums, potato, tomato juice and chicken base.

2- Simmer for 30 minutes and then, add the cream and simmer over very low heat for 5 minutes. Then, filter in a sieve and season, to taste.
