Crab cakes

225 g rock crab meat

1 baked potato

2 tbsp. mayonnaise

Zest of 1 lime

1 tbsp. Espelette pepper

1 green onion, finely chopped

Salt and pepper, to taste

Breadcrumbs

1/2 cup white flower

1 egg, beaten

1/2 cup Corn Flakes or similar cereal

2 tbsp. oil

1. Peel the potato and mash it. Add all other crab cake ingredients and mix well.
2. With your hands or using a cookie cutter, shape 4 crab cakes with this mixture.
3. Coat the crab cakes in flour, then in the beaten egg and cereal.
4. In a non-stick skillet, cook in oil over medium heat until browned.
